Introduction:
Dive into rich, savory flavors with this easy-to-make Tuscan Orzo, lovingly prepared by Food Jonezi’s talented chefs Asia and Kelci. This comforting pasta dish features creamy orzo tossed with sun-dried tomatoes, fresh spinach, aromatic herbs, and Parmesan cheese. Perfect as a weeknight meal, this dish brings a taste of Tuscany to your table in just 30 minutes.


Ingredients:
- 1 tbsp olive oil
- ½ medium onion, chopped
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- ¼ tsp red pepper flakes
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt (plus more to taste)
- ½ tsp black pepper (plus more to taste)
- 1 package sun-dried tomatoes
- 1 tsp lemon juice
- 1 cup uncooked orzo pasta
- 1½ cups vegetable broth
- ½ cup half & half, room temperature
- ½ cup shredded Parmesan cheese
- 1 cup packed fresh baby spinach
- 2 tbsp fresh parsley, minced
Instructions:
- Heat olive oil in a pot over medium-high heat. Add chopped onion and sauté for 3-4 minutes until almost translucent.
- Add minced garlic, Italian seasoning, red pepper flakes, onion powder, garlic powder, sun-dried tomatoes, and uncooked orzo. Cook, stirring frequently, for 3 minutes to lightly toast the orzo.
- Pour in vegetable broth and half & half. Bring the mixture to a gentle simmer, reduce heat to medium-low, and cook uncovered for about 10 minutes, stirring occasionally.
- Remove from heat, then stir in shredded Parmesan cheese, baby spinach, lemon juice, and fresh parsley. Continue stirring until spinach wilts and cheese melts into a creamy sauce.
- Season with additional salt and pepper to taste.
