Introduction:

Dive into rich, savory flavors with this easy-to-make Tuscan Orzo, lovingly prepared by Food Jonezi’s talented chefs Asia and Kelci. This comforting pasta dish features creamy orzo tossed with sun-dried tomatoes, fresh spinach, aromatic herbs, and Parmesan cheese. Perfect as a weeknight meal, this dish brings a taste of Tuscany to your table in just 30 minutes.

Ingredients:

  • 1 tbsp olive oil
  • ½ medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt (plus more to taste)
  • ½ tsp black pepper (plus more to taste)
  • 1 package sun-dried tomatoes
  • 1 tsp lemon juice
  • 1 cup uncooked orzo pasta
  • 1½ cups vegetable broth
  • ½ cup half & half, room temperature
  • ½ cup shredded Parmesan cheese
  • 1 cup packed fresh baby spinach
  • 2 tbsp fresh parsley, minced

Instructions:

  1. Heat olive oil in a pot over medium-high heat. Add chopped onion and sauté for 3-4 minutes until almost translucent.
  2. Add minced garlic, Italian seasoning, red pepper flakes, onion powder, garlic powder, sun-dried tomatoes, and uncooked orzo. Cook, stirring frequently, for 3 minutes to lightly toast the orzo.
  3. Pour in vegetable broth and half & half. Bring the mixture to a gentle simmer, reduce heat to medium-low, and cook uncovered for about 10 minutes, stirring occasionally.
  4. Remove from heat, then stir in shredded Parmesan cheese, baby spinach, lemon juice, and fresh parsley. Continue stirring until spinach wilts and cheese melts into a creamy sauce.
  5. Season with additional salt and pepper to taste.
