These cheesy, herb-seasoned quesadillas are loaded with tender steak, spinach, sun-dried tomatoes, black olives, and gooey mozzarella, all tucked into spinach tortillas. Paired with a refreshing, homemade tzatziki sauce, it’s a crowd-pleasing dish that balances indulgence and freshness.

Greek Steak Quesadillas with Tzatziki Sauce

Ingredients

For the Quesadillas:

  • Spinach tortillas

  • Mozzarella cheese, shredded

  • Fresh spinach leaves

  • Sun-dried tomatoes, chopped

  • Black olives, sliced

  • Cooked steak, sliced or chopped

  • Cumin, to taste

  • Salt-free seasoning, to taste

  • Onion powder, to taste

  • Garlic powder, to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt

  • ½ English cucumber, finely grated and drained

  • 2 cloves garlic, minced

  • 1 tbsp chopped fresh dill

  • 1 tbsp freshly squeezed lemon juice

  • 1 tsp lemon zest

  • 1 tbsp chopped fresh mint

  • Ground black pepper, to taste

  • Salt-free seasoning, to taste

  • 2 tbsp olive oil

Instructions

  1. Prepare the Tzatziki Sauce
    In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, dill, lemon juice and zest, mint, olive oil, black pepper, and salt-free seasoning. Cover and refrigerate for at least 15–20 minutes to let the flavors develop.

  2. Cook the Steak
    Season steak with cumin, onion powder, garlic powder, and salt-free seasoning. In a skillet over medium-high heat, cook steak until browned and cooked to desired doneness. Let it rest briefly before slicing or chopping.

  3. Assemble the Quesadillas
    On one half of each spinach tortilla, layer mozzarella cheese, steak, spinach, sun-dried tomatoes, and black olives. Fold the tortilla over to form a half-moon.

  4. Cook the Quesadillas
    Heat a clean skillet over medium heat. Cook each quesadilla for 2–3 minutes per side, or until golden brown and the cheese is melted.

  5. Serve
    Cut into wedges and serve warm with chilled tzatziki sauce on the side.
